The Ultimate Comfort Winter Salad

This is the type of salad you want to make in January. It screams comfort, when a salad normally wouldn’t lol. But believe me that this one will definitely be a favourite.

Roasted butternut squash mixed with crispy walnuts and apples and a tangy lemon tahini dressing gives this a triple * chefs kiss * It’s one of those salads you can eat all day everyday without getting sick of it (lunch time anyone?)

The Ultimate Butternut Squash Lemon Tahini Winter Salad

The most satisfying and comforting salad you'll have all winter long

  • Food Processor


  • Bowl of lettuce
  • 1/2 cup buternut squash, cubed and roasted
  • 2 green apples, cubed
  • 1/2 cup toasted walnuts

Lemon Tahini Dressing

  • 1/2 cup tahini
  • 1/2 tsp garlic powder or 1 garlic clove minced
  • 1/4 cup olive oil
  • 1/2 lemon, juiced
  • salt and pepper to taste
  • water to thin


  • Add all veggies to a salad bowl.
  • To a food processor, mix garlic, tahini, lemon, salt and pepper. Slowly add in the olive oil. Mix again and thin with water if needed. Serve and enjoy!
