Holiday Citrus Salad with Apples, Walnuts and a Blood Orange Vinaigrette

I love a good holiday salad and this one is my forever favourite! I like to serve it during the main course. The notes of citrus mixed in with the walnut, apples and peppery arugula are an amazing combination.

If you don’t want to serve it over the holidays you can do it any other time as well!

Holiday Citrus Salad

A delicious, crisp, beautifully flavoured salad perfect for the holidays!

Ingredients
  

  • 1 small pack of baby arugula
  • 2 apples, diced
  • ½ cup toasted walnuts
  • 2-3 tbsp goat cheese
  • ½ blood orange, peeled and sliced

Holiday Dressing

  • ¾ cup olive oil
  • 2 tbsp maple syrup
  • 2 tbsp balsamic vinegar
  • ½ blood orange, juiced
  • salt and pepper

Instructions
 

  • Mix the salad in a bowl with walnuts, apples, goat cheese and blood orange slices.
  • In a separate bowl, whisk together olive oil, balsamic vinegar, maple syrup, salt and pepper and blood orange juice. Taste and adjust how you like. Pour over the salad and toss.
  • Serve and eat!
